Sour Pickles, Green Tomato Relish, Pickled Beets, Spicy Dilly Beans and Zucchini Relish.Isn’t canning such a love/hate relationship? There are moments when I love it and moments I hate it, but in the end when I see all of our goodies lined up in a row…it is love all the way. So what have you been canning lately?

No canning yet here but we’ve been busy making fruit leather. After a week vacation next week, I’m hoping to make my first batch of dilly beans. Can’t wait 🙂

I canned 36 quarts of dill pickles a couple weeks ago, and I still have 10 more pounds brining in my crock. Tomatoes will be next if they ever ripen! And I have a love/hate relationship with canning, too. Love it when it is all done!

I love to can and I agree, its a love/hate thing. I have a question though. I have a terrible time getting pickles to stay crisp. Do you have any ideas why most of mine come up mushy and go directly to the compost pile? 🙂
